Tasting: A profound expression of high-altitude Cabernet Franc. The nose presents black fruits, graphite, violet, and mountain herbs, with subtle notes of cedar and crushed rock. The palate shows remarkable precision with fine-grained tannins and intense mineral character.
Pairing: This distinguished wine pairs exceptionally with Sashi Beef, chargrilled Cinco Jotas Presa, or slow-cooked Iberico Pork Cheeks. The wine's structure complements dishes featuring wild Ceps or Morels. For cheese, serve with aged Parmigiano Reggiano or Truffle Pecorino. Black truffle risotto creates an outstanding winter combination.
Producer: Gran Enemigo represents the collaboration between Alejandro Vigil (chief winemaker at Catena Zapata) and Adrianna Catena. This single-vineyard wine comes from limestone-rich soils in Agrelo at 1,060 meters elevation. Their approach combines precise viticulture with minimal intervention winemaking, including concrete egg fermentation and aging, creating wines that express the unique character of high-altitude Argentine terroir.
Vintage: 2018 brought exceptional conditions in Mendoza. A cool, dry growing season with marked temperature variations between day and night allowed for slow, complete ripening. The result is a vintage showing remarkable freshness and aromatic complexity, with perfectly developed tannins and excellent aging potential.
