Tasting: Sophisticated and focused, offering classic Pauillac aromas of blackcurrant, cedar and graphite, layered with violets and subtle tobacco leaf. The palate presents exceptional balance with refined tannins, showing concentrated dark fruits, mocha and crushed stones, leading to an impressively long, aristocratic finish.
Pairing: Superb with Miguel Vergara beef ribeye or a perfectly seared Sashi Beef sirloin. Also pairs magnificently with Lumina Lamb and dishes featuring Black Truffle. For cheese, try with aged Fort Saint Antoine Comté or Parmigiano Reggiano. Decant for 2 hours before serving.
Producer: Château Pichon Baron, formerly known as Pichon-Longueville Baron, is one of Bordeaux's most iconic estates. The fairytale château, built in 1851, sits majestically opposite its historical sibling, Pichon Comtesse. Under the ownership of AXA Millésimes since 1987 and the direction of Christian Seely, the estate has undergone extensive renovation and reached new heights of quality. The 73-hectare vineyard occupies one of the finest terroirs in Pauillac.
Vintage: 2014 presented early challenges with a cool, wet summer, but was rescued by a glorious Indian summer through September and October. These perfect late-season conditions particularly benefited the Cabernet Sauvignon, allowing for optimal ripeness while maintaining freshness. The result is a classic Pauillac showing wonderful precision and energy.
