Tasting: A sophisticated village Pommard showing both power and finesse. The nose reveals concentrated dark cherries, blackberries, and violets, with subtle notes of earth and iron-like minerality. The palate demonstrates classic Pommard structure with refined tannins supporting layers of dark fruits, spice, and subtle leather notes. Both Allen Meadows and Neal Martin praise its impressive depth while maintaining appealing freshness.
Pairing: The wine's structure and depth pairs beautifully with Poulet de Bresse served with wild Ceps, or Guinea Fowl with Morels. For red meat, match with Sashi Beef or Limousin Veal with Autumn Truffle. The wine's refined power works particularly well with traditional Toulouse sausages or Iberico Pork Cheeks. For cheese, serve with aged Fort Saint Antoine Comté or well-matured Parmigiano Reggiano.
Producer: Nicolas Rossignol represents the fifth generation of his family to make wine in Volnay. Since establishing his own domaine in 1997, he has emerged as one of Burgundy's most talented winemakers. His new state-of-the-art winery, completed in 2016, combines traditional principles with modern precision. Nicolas follows organic practices and minimalist intervention in both vineyard and cellar, allowing each terroir to express itself purely. His Pommard sees judicious oak treatment, emphasizing fruit purity and site expression.
Vintage: 2019 proved exceptional in Burgundy, particularly for the Côte de Beaune. A warm, dry summer was punctuated by just enough rain to prevent vine stress. September brought perfect harvest conditions, allowing for optimal ripeness. The vintage produced wines of remarkable concentration and energy, with the natural power of Pommard beautifully balanced by ripe, sophisticated tannins.
