Natural acidity provides exceptional balance, while extended lees contact adds textural complexity and a distinctive mineral-driven finish.
Pairing: This sophisticated Chardonnay creates exceptional partnerships with premium seafood, particularly Ōra King Salmon, where the wine's texture complements the fish's rich character. Also sublime with Tristan da Cunha Lobster, as the wine's mineral notes enhance the shellfish's natural sweetness. For cheese lovers, Vacherin Mont d'Or offers an indulgent pairing. Producer: Springfield Estate, run by ninth-generation siblings Abrie and Jeanette Bruwer, represents the pinnacle of minimal intervention winemaking in South Africa. Their Wild Yeast Chardonnay, as the name suggests, relies entirely on indigenous yeasts for fermentation - a practice they've maintained since 1995, long before it became fashionable. The estate's rocky limestone and clay soils, combined with cool maritime breezes, create perfect conditions for producing world-class Chardonnay.
Vintage: 2023 brought ideal conditions to Robertson Valley, with cool spring temperatures followed by moderate summer conditions. Morning fog from the ocean helped maintain crucial acidity, while afternoon sunshine ensured perfect ripeness. The extended hanging time allowed for optimal flavour development while preserving the characteristic mineral freshness, resulting in wines of exceptional purity and balance.
