Tasting: A remarkable expression of Santorini's signature grape variety, showcasing intense mineral precision and volcanic complexity. The nose presents vibrant citrus, white stone fruits, and jasmine, underscored by distinctive saline notes. The palate combines concentrated lemon pith, green apple, and white peach with a profound mineral core. Exceptional tension between crisp acidity and textural depth leads to a long, crystalline finish marked by subtle notes of herbs and sea spray.
Pairing: This precise Assyrtiko is an excellent match for Ōra King Salmon, its acidity perfectly balancing the fish's rich oils. Outstanding with Gambero Rosso, where the wine's mineral intensity complements the prawns' sweet flesh. For cheese, pair with Pecorino Sardo.
Producer: Santo Wines, the union of Santorini's cooperatives, represents the collective expertise of the island's growers. Working with ancient ungrafted vines, many over 75 years old, trained in the traditional 'kouloura' basket system, they preserve Santorini's unique viticultural heritage. These low-yielding vines, growing in volcanic ash soils and shaped by constant winds, produce grapes of exceptional concentration and character.
Vintage: 2022 was a classic vintage on Santorini, with typical winds and dry conditions throughout the growing season. The island's unique microclimate, moderated by cooling sea breezes and morning mists, produced Assyrtiko with exceptional concentration while maintaining the variety's characteristic high acidity.
