Tasting: Pale salmon with copper highlights. Complex bouquet of wild strawberries, white peach, and mandarin zest. The palate reveals layers of red berries, white flowers, and subtle spice, supported by fresh acidity and a creamy texture with remarkable length.
Pairing: Outstanding with Ōra King Salmon carpaccio or seared Akami Bluefin Tuna. Pairs beautifully with Shark Bay Prawns in ginger sauce. For cheese, try with Vacherin Mont d'Or or aged Pecorino Sardo. Excellent alongside sautéed wild Chanterelles.
Producer: A groundbreaking collaboration between China's oldest winery Changyu and Austrian winemaker Lenz Moser. The estate, situated at 1,100 metres altitude in the Helan Mountains, represents China's most ambitious fine wine project. Moser's expertise combined with Ningxia's unique terroir has created wines that challenge global perceptions of Chinese viticulture.
Vintage: 2018 saw exceptional conditions in Ningxia, with minimal rainfall and significant diurnal temperature variation. Cool nights preserved acidity while warm days ensured optimal phenolic ripeness, producing wines of unusual complexity and finesse.
