Tasting: Brilliant pale straw with silver highlights. Complex nose of gunflint, white flowers, and gooseberry. The palate shows exceptional tension between ripe citrus, crushed stones, and white peach, underscored by vibrant acidity and a pronounced chalky minerality characteristic of Les Chailloux's silex soils.
Pairing: Sublime with Ōtoro Bluefin Tuna or Chilean Sea Bass in beurre blanc. Pairs magnificently with Sturia Oscietra Caviar. For cheese, exceptional with aged Fort Saint Antoine Comté (24+ months) or fresh Crottin de Chavignol. The wine's minerality excellently complements wild Morels in cream sauce.
Producer: The Fouassier family, organic pioneers since 1971, represent the 10th generation of winemakers in Sancerre. Les Chailloux, their prized single-vineyard cuvée, comes from 45-year-old vines grown on silex (flint) soils. The estate follows strict biodynamic principles and uses horse-drawn ploughs to maintain soil integrity.
Vintage: 2022 brought ideal conditions to Sancerre, with moderate rainfall in spring, followed by a warm, dry summer. Cool nights in August and September preserved crucial acidity while allowing perfect ripeness, resulting in wines of exceptional balance and aging potential.
