Tasting: A refined and elegant expression of Pouilly-Fuissé, displaying pristine minerality with notes of white peach, citrus blossom, and fresh brioche. The palate reveals layers of ripe stone fruit, preserved lemon, and subtle vanilla, underpinned by a precise chalky minerality and refreshing acidity. The oak integration is masterful, adding complexity without overwhelming the wine's natural character.
Pairing: This Premier Cru white Burgundy pairs magnificently with Ōra King Salmon, particularly when simply grilled to maintain its natural richness. Also excellent with Poulet de Bresse in a classic cream sauce, or Fort Saint Antoine Comté aged 24 months. For truffle enthusiasts, this wine harmonises beautifully with risotto featuring fresh White Truffle, while wild Morels in a cream sauce make for an exceptional vegetarian pairing.
Producer: The Trouillet family has been crafting wines in Pouilly-Fuissé for four generations, with current winemaker William Trouillet continuing his father Jean's legacy of minimal intervention winemaking. Their 'Vers Cras' vineyard, elevated at 250-300 metres, benefits from limestone-rich soils and optimal south-eastern exposure, allowing for perfect ripening while maintaining crucial acidity. The estate practices sustainable viticulture, hand-harvesting all their Premier Cru parcels.
Vintage: 2020 was marked by an early, warm spring followed by a hot, dry summer in Burgundy. The advanced growing season led to an August harvest, with the 'Vers Cras' vineyard's elevation helping to preserve freshness despite the heat. The resulting wines show excellent concentration while maintaining balance and minerality.
