Tasting: This lovely, understated Champagne offers a lush and fragrant array of white fruits, pears, baked apples, and apricots that dominate the palate, complemented by delicate undertones of honey, hazelnuts, dried currants, and brioche. The finish is extended, balanced, and well-structured, showcasing a delightful freshness. Truly a find.
Pairing: Great Champagne can be paired with most foods, particularly fish and creamy sauces. Champagne not only complements caviar with its natural aromas and flavours, but its texture also perfectly offsets the rich, oily mouthfeel of caviar.
Producer: Since 1947, Palmer & Co. has been crafting distinguished and refined Champagne. Initially formed by seven winegrowers, the company now cultivates grapes across 415 hectares, with 200 hectares spread over 40 crus in the Montagne de Reims, supplemented by vineyards in the Côte de Sézanne, Côte des Bar, and Marne Valley. This diverse range of terroirs contributes to the balanced profile of their wines.
Led by Cellar Master Xavier Berdin, the team at Palmer & Co. excels in the art of blending. They utilize a unique 35-year-old Solera system to enhance the depth and complexity of their non-vintage cuvées.
Time plays a crucial role in the development of their Champagnes. Non-vintage varieties mature for at least three years, while vintage selections age between six to eight years, and larger bottles can remain in the cellars for over a decade.
Deep beneath Reims, the Champagne matures in expansive chalky cellars, stored in formats ranging from magnums to decades-old Nebuchadnezzars and Methusalems. Palmer affectionately refers to standard 750ml bottles as "half magnums,” emphasizing their preference for large formats.

All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
