Pairing: This refined Saint-Emilion pairs excellently with Sashi Beef, roasted Poulet de Bresse, or Iberico Secreto. The wine harmonizes with wild Ceps and Chanterelles. For cheese, serve with aged Fort Saint Antoine Comté or Pont-l'Évêque.
Producer: Château Viramiere sits on Saint-Emilion's limestone plateau, where the estate's vineyards benefit from exceptional drainage and mineral-rich soils. Under the current generation's guidance, the château maintains traditional Right Bank practices while incorporating modern precision in the cellar. Their approach focuses on expressing the unique character of their limestone-clay terroir through careful fruit selection and gentle extraction.
Vintage: 2020 delivered an exceptional growing season in Saint-Emilion. Early budbreak was followed by a warm, dry summer, with beneficial rain in August. The Merlot achieved perfect ripeness while maintaining freshness, producing wines of concentration and balance, with excellent aging potential.
