Pairing: This powerful Cabernet Sauvignon finds its perfect match with premium cuts of beef, particularly Miguel Vergara ribeye, where the wine's structure harmoniously balances the meat's rich flavour. Also exceptional with Westholme Wagyu striploin, as the wine's tannins complement the marbling beautifully. For cheese pairings, aged Fort Saint Antoine Comté offers a sophisticated partnership. During truffle season, shaved Black Truffle with wild Ceps creates an extraordinary complement to the wine's earthy notes.
Producer: Aberdeen Wine Company, founded by the Mitchell family in 1998, has become synonymous with premium Victorian wines. The name "Black Angus" pays homage to the region's historic cattle farming heritage, where Angus cattle and vineyards have shared the fertile landscape for generations. Their sustainable viticulture practices and dedication to expressing regional character have established them as a benchmark producer of Central Victorian Cabernet Sauvignon.
Vintage: 2021 brought ideal conditions to Central Victoria, with consistent rainfall during winter and spring, followed by a moderate summer. The extended ripening period allowed for excellent flavour development while maintaining natural acidity. Cool nights during the harvest period helped preserve the aromatic complexity, resulting in wines of exceptional balance and ageing potential.
