Also known as turnip-rooted chervil, this rare heritage root vegetable is delicately flavoured with subtle notes of anise and sweet parsley. Each cream-coloured root is hand-harvested during the winter months when its distinctive flavour is at its peak.
These precious roots are celebrated for their refined, delicate taste that's sweeter than parsnip with a gentle aromatic quality. Their firm, smooth flesh and distinctive nutty undertones make them a prized ingredient in traditional European cuisine.
Prepare simply by peeling and cooking in salted water until tender, then serve buttered as a sophisticated side dish. Excellent when washed, un-peeled and roasted with other root vegetables, puréed for soups, or sliced thinly and fried as crisps. Pairs beautifully with game meats and mushrooms.
