Origin: France
Known as the 'oyster plant' for its subtle seafood-like flavour, this elegant root vegetable offers a delicate, complex taste with nutty undertones. Each carefully harvested root presents pristine white flesh beneath its dark exterior.
This winter delicacy is prized by chefs for its versatility and unique flavour profile that sits between artichoke and mild parsnip. The long, slender roots require careful handling but reward with a remarkable eating quality that makes them a true connoisseur's vegetable.
Peel under cold water to prevent oxidation, then poach gently in milk and butter until tender. Alternatively, slice thinly and roast in a hot pan with olive oil, once a little colour is achieved add butter and continue to roast for a few minutes, once golden a splash of water while over the heat to form an emulsion.. Serve when the salsify is tender.
Producer: Grown by the Petit family in northern France's Pas-de-Calais region, where the cool climate and deep, sandy soils produce exceptional root vegetables.
