These knobbly tubers, neither from Jerusalem nor artichokes, offer a deliciously sweet, nutty flavour with subtle hints of globe artichoke. Each freshly harvested batch delivers exceptional crispness and the characteristic chestnut-like notes that make them a winter delicacy.
Also known as sunchokes, these native American tubers have been perfected through centuries of French cultivation. Their rich, complex flavour and versatility have earned them a permanent place in classical and contemporary cuisine.
Scrub well and roast with olive oil and thyme until golden, or slice thinly and serve raw in winter salads. For a luxurious option, simmer gently in milk and blend into a silky soup.
Producer: Grown by the Laurent family in the rich, sandy soils of Brittany, where their farm has specialised in heritage root vegetables for over four generations.
