These eye-catching beets offer a milder, more refined flavour profile than common beetroot, with none of the earthiness that some find overwhelming. Their natural beauty makes them a stunning addition to both hot and cold dishes, whilst maintaining their pattern when carefully cooked.
Slice thinly and serve raw in carpaccio, or roast whole and gently wrapped in foil at 180°C for 45-60 minutes. To preserve the striking pattern, avoid boiling and opt for gentle cooking methods.
