Noirmoutier potatoes are fairly round and have fine, delicate yellow skin that is very flavourful. The soil and island home of the Noirmoutier gives this potato a sweet and salty flavour with hints of lemon and even walnut that is above and beyond other varieties.
For best results, cook in simmering salted water for 8/10 minutes. Strain and let rest for at least 10 minutes to allow the natural starch in the potato to firm up. Serve with butter, salt, and pepper, as well as chopped Fines Herbes.
Similar in flavour profile to traditional Jersey royal's but can be said to be a better more developed flavour with a slightly waxy texture. They work really well with roasted lamb rack and spring vegetables.
