The Bresse chicken is a symbol of France with its red coloured head, white feathers, and blue feet.
They have been famous since the 1600s when the Duc de Savoie offered the plumpest roosters from Bresse to King Henri IV, who praised them highly for their tenderness and delicious flavour. They are raised exclusively in the small town of Bresse, which lies in the east of France.
Bresse are the only Poultry to be awarded their own AOC! Their upbringing and feeding are carefully controlled, meeting extremely strict standards birds must live most of their lives out of doors.
Each Poularde De Bresse bird lives outside for at least five months and must have an area of pasture that measures at least 12 square yards (10 square meters). Compare that to factory-fed or even free-range chickens – In fact, most of them have much more space to roam around and it’s delightful to see them running free in the fields and forests around the farms. It is absolutely forbidden to feed them any hormones, antibiotics, or chemicals!
This Particular Bresse chicken is from a female hen that has never laid, and after its outdoor life is complete goes through a fattening process for three weeks where they eat corn, wheat, maize, cereals, milk, and buttermilk.
Very much a bird reserved for special occasions!
PREPARATION
All of our poultry is prepared in house. We prepare each bird on the day it arrives to us from France. We use trussing needles to tie the birds into the perfect shape for oven roasting which means closing any cavities so the birds cook evenly.
FROZEN POULTRY
For optimum freshness we prepare our poultry as soon as it arrives from our suppliers. Each bird is wrapped and frozen to -30°c using a blast freezer. This method prevents ice crystals forming in the meat so the bird is in perfect condition when defrosted, and offers exceptional cooking results.

We use reliable third-party express courier services and high-quality insulated packaging. However, delays can occur, so we package items to ensure they remain in excellent condition.
If you need your delivery on a specific day, please mention this in the notes section on the checkout page. We may advise alternative options, such as dispatching your order a day earlier to ensure timely arrival.
All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.
