A carefully matured Red Leicester with a distinctive russet colour and unique crystalline crunch. Aged for over 16 months, this cheese develops a complex flavour profile that sets it apart from younger Red Leicester varieties, with a naturally occurring calcium lactate providing its characteristic crunch.
A sophisticated evolution of traditional Red Leicester, offering sweet-savoury notes with a distinctive umami character. The extended aging develops deep caramel notes and a slight nuttiness, while the naturally forming crystals provide an enjoyable textural contrast to the firm, creamy paste.
Outstanding on a cheeseboard, particularly when paired with fresh figs or quince paste. Grates beautifully over gratins or cauliflower cheese. For a luxurious twist, try melted over sourdough toast with a dash of Worcestershire sauce.

All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
