A perfectly aged raw milk Comté from master affineur Marcel Petite, matured in the historic Fort Saint Antoine. This hard mountain cheese displays a complex flavour profile with notes of roasted nuts, brown butter and subtle crystallisation developed over 12-15 months of careful aging.
This exceptional Comté exemplifies the region's centuries-old cheesemaking tradition. Its distinctive taste reflects the diverse flora of the Jura mountain pastures where Montbéliarde cows graze freely. The extended ageing process creates a firm yet creamy texture with occasional crunchy protein crystals.
Serve at room temperature alongside a crisp Jura white wine or Champagne. Excellent on a cheeseboard, melted in traditional Fondue Comtoise, or grated over pasta dishes. Pairs beautifully with roasted nuts, honey, and fresh or dried fruits.
Producer: Marcel Petite has been aging Comté in the converted military Fort Saint Antoine since 1966. Situated at 1100 metres altitude, the fort's natural temperature and humidity provide ideal conditions for maturing Comté to perfection.

We use reliable third-party express courier services and high-quality insulated packaging. However, delays can occur, so we package items to ensure they remain in excellent condition.
If you need your delivery on a specific day, please mention this in the notes section on the checkout page. We may advise alternative options, such as dispatching your order a day earlier to ensure timely arrival.
All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.
