Fresh Wild Asparagus
Wild Asparagus, or garden asparagus, folk name sparrow grass, scientific name Ornithogalum pyrenaicum, is a perennial flowering plant species. Its young shoots are used as a spring vegetable. It was once classified in the lily family, like the related Allium species, onions and garlic.
It is predominantly found along coastal regions, thriving in soils with elevated salt content. Its primary habitats are concentrated in Devon and Cornwall.
The spears have a familiar Asparagus flavour but are slightly more intense. They are delicious quickly blanched (1 min) in salted boiling water, or steamed.
