WILD GARLIC 150g
Fresh Wild Garlic
A delicious sign of the old, wild garlic is also known as ramson. Look for them in shady woods, where they coat the woodland floor in spring.
It is a popular foraged ingredient. Its leaves and stalks can be eaten raw in salads, blanched and used in place of spinach, or made into a delicious soup. They have a mild garlic flavour, and the flowers are also edible and can be added raw to salads.
When blended with pine nuts, olive oil and a few tablespoons of grated parmesan, it is easy to make a delicious wild garlic pesto. The stalks can also be sliced and used as an alternative to fresh chives.
Wild Garlic should have the stems picked and the leaves gently wiped with a damp cloth or paper towel to remove loose dirt.
