Pedro Ximénez is crafted from its namesake grapes, which are left to overripen and then sun-dried, resulting in a must with an extraordinarily high sugar content. The wine undergoes an exclusively oxidative ageing process, which gradually intensifies its aromatic profile and enhances its complexity. Throughout this maturation, the variety's distinctive freshness is meticulously preserved.
Pedro Ximénez wine is transformed into vinegar through a process of acetification, where acetic acid bacteria convert the alcohol into acetic acid. This mixture ferments in barrels or tanks, with the bacteria continuing to produce acetic acid. The vinegar is then aged, often in oak barrels, allowing it to develop complex flavours reminiscent of the original wine. Throughout production, acidity and flavour are carefully monitored. After reaching the desired profile, the vinegar is filtered and bottled. The result is a rich, complex vinegar that maintains the characteristic sweetness and dried fruit notes of Pedro Ximénez wine, combined with a sharp acidity.
A lovely accompaniment to game birds is a warm (room temp) sherry vinaigrette comprising 1 part sherry vinegar, 3 parts neutral oil, Dijon mustard, honey, and one roasted garlic glove, blend the ingredients to emulsify then add chopped, roasted hazelnuts and chopped fresh chives.
