Chicken of the woods is a bright, bold bracket fungus, and with its distinctive look, it can be easy to spot on the trunks of trees like cherry and oak. Chicken of the Woods mushrooms are typically bright orange or yellow, sometimes with a white edge. They are found in North America, Europe, and parts of Asia. They typically grow from late spring to early autumn.
The popular quote "it tastes like chicken' is mostly true, it is more relatable to the texture of roast chicken when cooked.
Chicken of the woods can be sliced thinly and sautéed and added to rice dishes such as risotto or broken down into larger chunks and fried or roasted with or without coating in milk and flour. The latter offers a crispy texture on the outside. It is also quite common that chicken of the woods are soaked in milk overnight to tenderise them.
Allergic reactions: While it isn’t exactly common, some people get a numbing sensation in their lips after eating Chicken of the Woods.
