CINCO JOTAS IBÉRICO PORK PRESA (SHOULDER)
Ibérico Presa from Cinco Jotas.
Cinco Jotas was founded around 1925. Life was slower then. Plenty of time was taken to achieve a delicious product, the result of years of working experience and following a trial and error method, in order to achieve the optimum point of flavour, texture and aroma.
Today, Revisan Ibéricos is a family business run by the 3rd and 4th generations of the Revilla family who continue to maintain the same philosophy: the product must be excellent, but with the added advantage that technology provides in the production process.
Ibérico Pork Shoulder Cut is located along the length of the spine, the presa is one of the most delicate and exquisite cuts of the Iberian pig. This is why it’s often used to make delicious sausages, even though fresh meat preserves its rich flavour.
The presa represents a successful balance between thickness and distribution of healthy fats. It is in fact the most balanced cut due to the many streaks of intermuscular and intercellular fats, resulting in meat that is rich in aromas and exceptional marble veining.
Cooking Tip: For best results roast the presa in the oven after sealing it in a pan or cook over charcoal.
Heat a large heavy-based or non-stick frying pan over high heat, season the shoulder cut generously with salt and pepper. Add olive oil to the pan, once hot add the seasoned Presa and colour on all sides.
After being in contact with the pan, a process of healthy fat marbling melts on the palate, releasing intense aromas and nuances. Once golden brown place in the oven at 180°c for approx 15/20 minutes. Ibérico pork can be served pink and the presa will medium-rare when the centre of the thickest part is 55°c, medium at 60°c, medium well (maximum cuisson) 65°c. Allow to rest for 10 minutes as this is how to best preserve the essence of its juiciness and taste the authentic flavours of Cinco Jotas ham.
Alternatively, you can cook over an open flame using direct then indirect heat or reverse sear method.
