IBÊRICO PORK CARRILLERA (CHEEKS)
Carrillera, or Iberian pork cheek, comes from the area of the lower jaw of the animal and consists of two muscles, it is notable for its delicate flavour and for being extremely mellow.
The meat of the pork cheek is juicy and distinguished by a gelatinous texture produced by its high collagen content. The muscles that make up this cut are responsible for chewing, thus resulting in fibrous flesh. This quality is perfectly balanced by a typical tenderness, evident in its intense veining that signals the presence of intermuscular fats.
Unlike other parts of the Iberian pig, it is not recommended to grill this cut. As it is rich in collagen and becomes gelatinized while cooking under slow heat, giving it a creamy texture. It is highly advisable to cook it in a stew or to preserve it in its own fat.

All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.
