SALSUS CHICKEN STOCK
No sauce, soup, broth or risotto is made good without a fabulous stock as one of the base ingredients.
It is easy to overlook something so simple and with the ease of using powdered cubes, making fresh stock from scratch seems a rare thing indeed. However, there is no substitute for it, and a good stock is worth every penny and is usually hard to find.
Salsus chicken stock is made exclusively from natural ingredients. The stocks are made from roasting bones and vegetables to enhance their rich taste, then place them into a cooker with water, vegetables and spices for slow cooking. They do not use additives and are paleo and keto diet-friendly.
The fond is then strained and reduced before packing into cartons offering safe storage in a cool dark place for over 6 months.
When simmered with water over a long period, chicken bones result in a highly flavourful viscous liquid that reduced further, provide an excellent body for white wine-based sauces or can be added to equal quantity beef stock and then reduced by 4/5 to create an excellent demi-glace.
For perfect Chicken Jus, reduce 200ml of red wine by half, add 1 litre Salsus Chicken stock and 1-litre Salsus veal stock (the veal helps with flavour but more importantly, viscosity).
Bring to the boil and skim any foam that rises to the surface. Lower the heat slightly to just under a rolling boil. As the liquid evaporates, the viscosity will increase.
Remove from the heat when the jus coats the back of a spoon and falls away with a thickness just short of double cream. The total yield should be around 400ml. The jus can be cooled and then refrigerated where it will become solid; this solid mass can be cut, wrapped and frozen for later use, and as a guide, 30-40ml of jus is ample for a portion.
Alternative flavours; replace 100ml of red wine with Madeira, replace the red wine with white wine for a lighter flavour or 50/50 white wine and Marsala, add a touch of cream for white meat/fish sauces... can also be finished with a splash of fruit vinegar such as our Fig & Date, which works perfectly with Duck or Pigeon dishes.

Store in a cool dark place - Refrigerate after opening and use within 3-4 days. Alternatively, freeze any unused product in a suitable container.

We use reliable third-party express courier services and high-quality insulated packaging. However, delays can occur, so we package items to ensure they remain in excellent condition.
If you need your delivery on a specific day, please mention this in the notes section on the checkout page. We may advise alternative options, such as dispatching your order a day earlier to ensure timely arrival.
All items leave our facility in perfect condition with a good use-by date. Please consider this when selecting your delivery date. Once dispatched, the package is under the responsibility of our couriers, making it difficult to change the delivery address or expedite delays.
We do offer Saturday delivery, but please note that our couriers do not operate phone support at weekends, and our customer service is closed. For time-sensitive deliveries, we recommend choosing a weekday to allow us to address any issues promptly.

ORDERS CONTAINING FROZEN PRODUCTS ONLY
If you have space to store them, please request your order to be delivered as soon as possible, or choosing delivery before December 20th. We reserve the right to change your delivery date up to to 2 days prior if we feel it runs the risk of not arriving to you promptly.
FRESH TRUFFLES
Your truffles will be harvested as close to Christmas as possible to offer the longest shelf life and the freshest product. We fly them in from Europe early each morning on the same days we send them to you.
Last available Pre-Christmas delivery is 23rd December and the truffles will be good for a minimum of 6 days, any longer may impact your enjoyment - PLEASE notify us via email if you need them for the exact delivery day you requested or consider receiving them a day earlier, if that date is available.
As always with fresh truffles they are best eaten as soon as possible to enjoy maximum aroma.
FRESH PRODUCTS
All fresh products are supplied with a use by date beyond 28/12/24, with the inclusion of fresh mushrooms and fresh truffles. We aim for delivery no later than the 23rd of December
WAGYU STEAK / FROZEN PRODUCTS ONLY/ DRY GOODS
All of our frozen products have a long shelf life in the freezer or at least 5 days if defrosted. Orders containing only frozen products will be delivered no later than 20th of December.
You can order certain products (subject to availability) for delivery on 30/12/24
White truffles will not be available for delivery between Christmas & New Years Eve, Instead please order fresh black truffles.
