Boudin Blanc is a French sausage made from prime cuts of pork with a secret blend of seasoning which has been protectively treasured since the 17th century, a specialty from the champagne Ardenne region of France.
Made with morels and other mushrooms and flavoured with brandy, these white pork sausages have a fine and distinctive taste. As a main course or as a starter, they can simply be accompanied by green salad or mashed potatoes.
For best results poach slowly in water for 10 minutes, pat dry, then add to a frying pan over a medium heat and cook until lightly golden brown on all sides. Do not cook in the oven or over a high temperature as the sausages will split.
