BABY SHIITAKE 250g
FRESH BABY SHIITAKE MUSHROOMS
(Lentinula edodes)
Baby shiitake mushrooms range in colour from amber to brown. Each mushroom has an umbrella-shaped cap with a curled rim. Their caps have a cream-coloured, supple-firm interior. Unlike mature shiitake mushrooms, baby shiitake mushrooms are entirely edible, as their thin stalks remain tender when young. When cooked, shiitakes release a garlic-pine aroma and have a rich, earthy, umami flavour.
Like their mature counterparts, baby shiitake mushrooms are widely used in Asian cuisine. However, they are not limited to Asian recipes; as a cultivated variety, they can be substituted in recipes that call for wild mushrooms.
Pair shiitakes with Asian mustard greens, rice, noodles, garlic, soy, and chile. They are especially delicious when roasted in a hot pan with olive oil.
Shiitake mushrooms are native to East Asia, specifically China and Japan, and have been growing wild since prehistoric times. The first documented record of shiitake cultivation dates back to China in AD 199. Cultivated shiitakes require special growing environments. Modern cultivation methods use controlled temperature, heating, humidity, light, and moisture content to produce the highest possible yields.
