This protected regional delicacy represents one of Britain's finest culinary treasures. Grown in the historic 'Rhubarb Triangle' of West Yorkshire, these stems require 40% less sugar in cooking than standard rhubarb, offering a natural sweetness and subtle complexity that makes them highly prized by discerning chefs.
Poach gently with vanilla and a minimal amount of sugar to preserve the delicate flavour, or slice thinly and serve raw with sweet dishes. The tender stems also make exceptional compotes and seasonal desserts.
