PERUVIAN MANGO 400g±
Peruvian mangoes are distinguished by their yellow undertones or spots, which become more prominent as the fruit ripens. These mangoes are noted for their deep caramel flavour and juicy, tender texture.
Our 'extra-quality' mangoes are transported by air freight, significantly contrasting with those imported to the UK by sea.
Mangoes, which exhibit increased ethylene production and intense cellular respiration during ripening, are classified as climacteric fruits. This means they can ripen post-harvest rather than needing to ripen while still attached to the tree. Superior quality, air-freighted mangoes benefit from extended maturation on the tree and reduced transit times.
In contrast, mangoes shipped by sea are often harvested prematurely, relying on the concentration of natural sugars during transit for the appearance of ripening. However, this process actually involves a loss of moisture and a softening of the fruit rather than true ripening, leading it often to surpass its optimal state. This process is frequently misinterpreted as ripening post-harvest.
A smart technique for consuming whole mangoes involves slicing the mango horizontally across its width (unlike how you would cut an avocado), then twisting off the bottom half to eat it directly with a teaspoon. The top half, containing the stone, can similarly be eaten with a spoon. This method exposes and allows for easy consumption of the flesh around the stone, often discarded as waste.
