JAPANESE A5 WAGYU TRIM - BMS 8-12 (EXCEPTIONAL)

This versatile trim pack is a by-product of cutting steaks to size. The packs contain high-quality meat, no sinew and no outer fat. Suitable for tacos, stir fry, chopped into burgers or Tepanyaki.

Wagyu Beef Trim:

Available in Sirloin/Ribeye and Fillet. A5 Wagyu denotes the top grade of all Wagyu beef produced in Japan, often hailed as 'the best beef in the world', a label attained due to its melt-in-the-mouth texture and exceptional umami flavour.

Authenticity: All Japanese Wagyu cattle are assigned a unique traceability ID number from birth. You will find your ID number on the front of the pack and can check the authenticity of your purchase here.

A5 Fillet Chain:

This cut is exceptional when slowly braised in dishes such as beef bourguignon; The beef tenderloin chain, also known as the side muscle or "chain meat," is a long, narrow strip of meat that runs alongside the main tenderloin. It is removed during the butchering of a whole tenderloin, but this flavorful cut shouldn't go to waste as it is an economical alternative to the more expensive main tenderloin in dishes where smaller pieces of tender beef are needed. It does however lend itself to slow cooking to break down the connective tissue that runs through it.

Kobe Beef Trim:

Available Sirloin/Ribeye and Fillet. No cow comes into this world and begins its life as Kobe beef. Kobe beef refers to cuts taken from the Tajima strain of Wagyu cattle raised in Hyogo Prefecture, Japan.

Even among “Tajima-Gyu” (Tajima cattle), only the chosen few that satisfy the specific quality criteria set out by the Kobe Beef Marketing and Distribution Promotion Association deserve the title "Kobe Beef".
