Built on rapeseed oil and fresh egg yolk, seasoned simply with vinegar, salt and pepper. Unusually for a French mayonnaise — and for a house built on mustard — it is made without any, which keeps it mild and rounded rather than tangy, and an easy base to season and flavour as you like.

A smooth, mild mayonnaise made with fresh egg yolk and rapeseed oil. Soft and delicate rather than sharp, it sits under other flavours rather than over them — a mayonnaise to serve alongside cold cuts, crudités, chips and cold poached fish, to spread through a sandwich, or to use as the base for an aïoli, a rémoulade or a herbed dressing. Keep refrigerated once opened.

Producer Maison Bornibus traces back to Alexandre Bornibus, who took over a mustard works near the Halles in Paris in the 1850s and built one of the most celebrated condiment names in nineteenth-century France — admired by Alexandre Dumas, who wrote of it in his Grand Dictionnaire de cuisine. The house still carries his name across a range of mustards, sauces and condiments.
