Our Fruit de Mer is a delectable seafood selection that brings the flavours of the ocean to your plate. This exquisite combination includes a variety of fresh and succulent seafood, carefully selected to ensure the highest quality and taste.
Indulge in the rich flavours of beautiful Carabineros, Tiger Prawns, Tristan De Chuna Lobster Tails, delicate Langoustines and wonderfully sweet King Crab. Each piece has been expertly sourced and prepared to deliver an exceptional dining experience.
To enhance the natural flavours of the seafood, our Fruit de Mer can be served hot or cold with homemade aioli or tarragon mayonnaise and a squeeze of lemon, allowing the true taste of the seafood to shine through, creating a harmonious and balanced flavour profile.
Cooking: For Best Results, prepare a simple court bouillon and cook all ingredients separately.
Combine cold water, wine and celery (cut into 1/8" slices) in a pot to create a court bouillon.
Thinly slice the white part of the halved and washed leek. Dice the onion and add it to the liquid, along with squeezed lemon juice, bay leaf, peppercorns, salt and parsley. Turn off the heat when the liquid reaches a simmer.
Cover and allow to steep for 30 minutes. Pour the poaching liquid into a pot suitable for cooking and heat to a temperature between 80°/90°c. Individually lace the seafood into the liquid and poach for 3 to 5 minutes.

- 1 leek (white part only)
- 1 small onion
- 1 lemon
- 1 bay leaf
- 1 tsp whole peppercorns (white or black)
- 2 tsp salt
- 1 sprig of fresh parsley
